Koeksiester – Unsugared


The humble Koesiester is a traditional Cape Malay delicacy. The recipe we use has been passed down from Mother to Daughter and is a closely guarded secret. This koesiester is a delicate blend of cardamon, cinnamon and a few extra spices to create a delectable savoury, to be enjoyed at any time of the day along with a perfect cup of coffee or tea.

How To Sugar Koesiesters.

Defrost koesiesters overnight or heat them in the microwave for 10 to 15 seconds.

They should not be cold to the touch but at room temperature.

Prepare the sugar syrup by placing two cups of boiled water in a medium-sized pot or pan.

Add two cups of sugar and stir till completely dissolved. You may add more sugar depending on how sweet you prefer your koesiesters. When the syrup starts bubbling and the water is somewhat stickier, then you know it's ready.

Place the koesiesters in the syrup and turn once to coat both sides—about thirty seconds per side. Using small tongs, place on a plate and sprinkle with desiccated coconut to taste.
